If you eat in Gaziantep or Hatay, a lot of the Syrian table will feel close. Kibbeh, grilled meats, stuffed vegetables, and sharp salads show up under names you may already know, or names that are only slightly different.

Where it diverges

The differences are in the details. Pomegranate molasses shows up more often. Breakfast can be heavier on cheeses, za’atar, and olive oil than tea and bread alone. Street sweets lean toward knafeh and baklava you will recognise, then a nut or cheese version you have not had.

We do not publish a restaurant ranking. Meals on the programme are the ones listed in the itinerary. The rest is your own money and your own curiosity, which is usually the better way to eat anyway.

If you have a real dietary limit, write it on the contact form before we lock the days. Kitchen flexibility varies by stop.
